While looking for a solution for project versioning/components, I came across the subproject feature suggestion. That would be a neat feature and it would surely be a solution for a lot of those use cases.
Another option (probably easier to implement) could be to keep using the projects/tasks/subtasks structure, but allow for an issue filter to be defined at the project level.
That way, you could slice and dice your issues by component/version/... based on a tag, a parent issue, ... (whatever options the filter mechanism would allow).
I'm aware those custom filters already exists in the tasks list, but we would like to see them on the overview tab (and perhaps the boards?) as well, so you can get an overview of the project status by component/version/... that way

I actually missed the filter on the board view, so that already kind of helps. Too bad the selected filter isn't being taken along when you switch back and forth between the tasks and the boards, but we can live with that.
We would still need some kind of filtering on the overview tab as well, so you can follow up on specific components/versions/... as well as on the entire project.
With this suggestion, I was thinking more along the line of being able to select some kind of filter at the top (e.g. next to the project name, so you would have a "My Project → My Component" selected there) so it becomes more apparent what subset of the issues you're looking at.
(As with my weights/estimates suggestion, I would definitely make this an optional feature too - for a lot of projects, the basic task list and board idea you have now is great)
