Hi, ive just tried Quire, i must say its great. Its sad to know that "self hosted" is not in your plan. As to why people need this : to have complete control over your content. A self hosted option is necessary as any downtime on a server can be critical for business. Or atleast the alternative of exporting all the data into a universal format to view offline.
