When inviting people via the link on the Project page, the user can come in, comment, but I'm unable to find them in the list of current users and unable to assign them tasks.

Hi Vishal, Sharing a project link is different from inviting a member into a project. Sharing a link is mainly for those who only want to share projects to users that don’t want to sign up (e.g. clients mostly). You would need to invite the member into the project first, so you can assign tasks to him/her. Thanks.
