Would it be possible to have template tasks that can be assigned. We could have a little tab with templates and then drag and drop them to various projects without having to re-make the task (or task with subset tasks) every time it needs to be reassigned.

Hi Federico, You can create a template task with an assigned person and then drag and drop it to the designated project. Another way is by right click > More > Transfer to. When you drop it to the designated project, there will be a pop-up dialog. You can check the Add people associated with the tasks to that project, so the assigned person will automatically be in that task. Also, check the Transfer a copy without comments from original tasks so the task will remain in the original place. I hope this helps.
