Since it's understandable that activity logs are limited based on subscription type, I think that initial creator of task should be always visible.
Currently if after task was created months or years ago, any other action was taken on task, it is not possible to see it anymore.
Therefore, it is impossible to see who initially created it to ask for details after long time when task is not containing all required info, making it hardly possible to process it further.
Probably most easy solution is just to keep first line of creation in activity log, unless it should be separate field visible independently.
