I would like to transfer the ownership of my organisation to another admin. How do I do this. other than by leaving the organisation?

Hi @Rkleinsmit - As a admin of the organization, you can set another member as an Admin in the Organization's Member page. (See this guide for more details: https://quire.io/guide/organization-members/)
This way, both of you will be Admins of the organization.
